One of the most distinct differentiators is the 'heat' that a pepper produces. The heat comes from a chemical called capsaicin. The majority of capsaicin is contained in the veins of the pepper itself. And you will know it when you bite into a pepper with high amounts. Sweet peppers, like bell and pimento have almost no heat and no capsaicin while hot peppers are loaded with it. The 'hotness' of peppers has been charted and is known as the Scoville Scale. You can see one and get a reference point that allows you to know hot hot peppers are.
